Sometimes you just need dessert. I’m not a recipe sharer…don’t worry, this isn’t going to turn in to a foodie blog. If you knew how far food blogger is from my realm of skills…you would laugh out loud. I cook and bake out of necessity…not hobby. That said…when I have a “good thing” I feel the need to pass it on to you…because we’re friends and that’s what friends do. They share their best tips and tricks.
So this past weekend was the busiest of busy weekends in a long time. Kids were coming and going and rides to and fro left us all dizzy by Sunday afternoon. As I set in to try to get the house into some semblance of cleanliness and organization before the workweek started…the air conditioner stopped working. I know. At first, I thought maybe I was just having a hot flash. But no. The air conditioner was blowing heat. Ugh.
The rest of Sunday was spent with me holding a flashlight as my husband worked on trying to solve the air conditioner problem (for the record our thermostat went out). Starting Monday off in a house that gave the appearance a family of pigs had moved in was not the way I wanted to start my week. So, Tuesday night I decided we all needed dessert. You know…for the recovery.
I don’t love baking…so I’m always looking for ways to give a “homemade” experience to my kids while not forcing myself to spend time baking in the kitchen. This is the recipe assembly that saves me every time so I thought you might need a trick to put up your sleeve too.
Easy Cool Whip Cake
Here’s what you need:
- Store bought angel food cake
- Milk
- Box of instant pudding
- Small tub of Cool Whip (my favorite is lemon)
- Mix together 1 cup of milk and box of instant pudding in a bowl until pudding is dissolved
- Fold pudding mixture into tub of Cool Whip
- Frost cake
Like, this really isn’t even a recipe. It’s a cheat It’s a fake. It’s a go-to for every last minute potluck. It’s always a hit.
During the summer I make this with lemon pudding making a light summer dessert. This week I tried sometime different…butterscotch pudding. It’s good. It’s not as good as the lemon though.
I’m also happy to report my house is put back together and it appears to hold an average but somewhat messy family…the normal everyday kind. Now I can get on with some of the projects I had on my list.
I’m one of those people that has to have everything cleaned up and organized before I start on something. I can’t work at a desk covered with papers and stuff. I have to clean it all off before I can start on something new. Are you like that or are you able to just forge ahead with a blind eye?

This recipe is great and you can also do coco powder in the cool whip for a touch of chocolate and top with smashed up heath bars! Delish!

Oh, Nancy! I just love to read your posts! I was just sitting here with a cup of coffee, reading your post, and when I came to the part about “the pigs moving in”, I started to laugh and my mouthful of coffee went everywhere! I’m still laughing because sometimes that’s exactly what our home looks like after we have had a busy weekend with company! I found this little wooden block at Marshall’s which says: “Excuse the mess BUT … we live here!” I have this on our island!

Your welcome on the dessert. 🙂 My silverware is Yamazaki Cache Gold. We registered for it when we got married 22 years ago. It’s a little on the expensive side (at least in my book). I don’t remember it being that expensive when I registered for it…but then again, I didn’t really understand the value of a dollar in my younger days. 🙂

Oh I am that way too Nancy….I cannot start a project unless the house organized and for the most part clean…or I cannot concentrate on the project at hand…I know…there has got to be a name for this “condition” . Love the easy peasy (do they say that anymore?) yummy dessert! We all need dessert!
